Known for its Mexican small plates and vibrant cocktails, Milpa is the creation of Chef Elia Herrera, a third-generation chef hailing from Córdoba, Veracruz. Chef Herrera brings the bold, authentic flavours of her homeland to Calgary, offering a menu that is both innovative and deeply rooted in tradition.
The design is a result of the inspiration of Mexican colonial architecture and the coastal landscapes of Veracruz, drawing inspiration from both the archways typical of Mexico’s historical buildings, the natural beauty of the seaside, and Chef’s conceptual approach to the menu. A series of arches, fabricated from CNC-cut MDF were designed to define spaces, and overlap, creating a sense of movement while subtly guiding guests from one area to the next. These arches give the illusion of higher ceilings, and the embedded LED lighting adds a soft, ambient glow that enhances the arches without overpowering the space.
The restaurant’s layout unfolds naturally, progressing from the entry and private dining area at the front, past the bar, which is part of the main dining room experience, with the kitchen pass and restrooms located towards the back. There is a smaller, more intimate dining area located behind the bar, providing a cozy retreat for guests seeking a more private experience. Each area is bordered by a different sized arch, which volumetrically defines the different spaces.
The design strikes a balance between the bold and the serene. The arches, painted in vivid blue, provide a lively contrast to the calm neutrals of the light wooden furniture, polished concrete floors, and quarry-tiled base of the bar. Milpa is a journey to the heart of Mexico, an escape from the ordinary, and an experience as rich and layered as the flavours on the plate
